Sorbets are typically dairy-free and are comprised of fruit, or a flavoring like chocolate, with water and sweetener. They are good bets for a low FODMAP choice, as long as you watch your choices; for instance, mango sorbet is probably not a good choice, but strawberry sorbet is. Sugar used as a sweetener is a good choice; high fructose corn syrup would not be. Bring to room temperature, then whisk or stir with a rubber spatula to lighten before using. Cake can be assembled 5 days ahead; wrap and chill.
